A solution (although it doesn’t propogate to the Skype buddy list) is to use the telephone fields. Skype is for phone calls anyway so this makes sense. Just create a custom label called Skype and enter the person’s Skype name in the field. Phone number fields aren’t limited to numbers so Address Book doesn’t complain.
